1½ | cups | A/P Flour | ||
3 | tbls | Garlic Powder | ||
3 | tbls | Essence (see Emeril Lagasse's Essence) | ||
1 | tsp | Kosher Salt | ||
½ | tsp | Fresh White Pepper | ||
1 | cup | Crystal Hot Sauce | ||
1 | cup | Your Favorite Hot Sauce | ||
½ | cup | Honey | ||
3 | tbls | Dark Brown Sugar | ||

To prepare chicken wings, cut off wing tips at the joint and discard the tips. In a large bowl, combine flour, garlic powder, Essence, salt, and white pepper. Dredge the wings in the flour mixture, shaking off the excess and set on a cooling rack for at least 10 minutes. Dredge again just before frying. Deep-fry the wings at 350° until crispy and golden brown, about 12 minutes. If pan frying, fry each side about 12 minutes. Remove the wings from the oil, pat dry While wings are frying, mix the hot sauce, honey, and brown sugar in a large bowl until mixture is smooth. If you want barbecued wings simply add ½ cup of your favorite BBQ sauce to the mixture at this point. Preheat the oven to 450°. Line a baking sheet with parchment paper or nonstick aluminum foil. Dip the fried wings in the sauce mixture, coat thoroughly. Place the wings on the baking sheet and bake until the sauce is dry, about 12 minutes. |
