Pulled Pork Chili
Serves 4-8

3 lbs Smoked Pulled Pork
1 lbs Kidney Beans
1 cup Finely Chopped Onion
1 cup Strong Brewed Coffee
1 12oz Beer of Choice
3 8oz Crushed or Ready Cut or Whole Tomatoes
(chunky style tomato sauce)
4 cloves Finely Chopped Garlic
3 tbls Chili Powder
2 tbls Beef Bouillon (6 cubes)
2 tbls Ground Cumin
2 tbls Sweet Hungarian Paprika
1 tbls Unsweetened Coco
1 tbls Ground Coriander
1 tbls Crystal Louisiana Hot Sauce
2 tsp Dry Oregano
1 tsp White Sugar
1 tsp Cinnamon
½ tsp Cayenne Pepper
 
Garnish
2 stalks Scallion Onions
1 cup Fine Shredded Sharp Cheddar


Prepare the beans (soak, pressure cook, etc.).

Brown all of the meat on high and drain off the excess fat.  Place in a CrockPot/Dutch Oven/Stew Pot on low/simmer.  Leave the fat residue in the pan.

In the same pan, stir cook the chopped onion on med-low until it begins to turn translucent.  Add garlic and simmer another few minutes until aromatic.  Add to crock pot.

Add the rest of the ingredients to the crock pot (except "Garnish") and simmer for 2 hours (+).

Garnish with sliced scallion onions and a pinch of shredded cheese.  Serve with a side of Mission brand corn tortilla chips.
