First wash the potato. Then core it straight through the middle, length wise. Then cut off the last inch of each end of the core to replace as plugs later. The rest of the core can be discarded or used for French Fried Logs (but that's yet another potato recipe).
Wrap the potato widthwise with the bacon strips, covering the entire potato except for the core hole. Chop the pepperoni, scallion onion, cheese and garlic into a fine dice and stuff into the middle of the potato. Wrap the potato bomb tightly with foil and you are ready to bake or grill.
375º for 45 minutes is typical. Your experience may vary.
