Chipped Beef
Serves 4

Qty Size Ingredient
1 5 oz Dried Beef
1 cup Whole Milk
1 cup Heavy Creme
1 cup Shredded White Cheddar
Shredded Jack
½ cup Light Red Wine
¼ cup Finely Chopped Sweet Onion
4 tbls Unsalted Butter
2 tbls AP Flour
1 tbls Worcestershire
1 tbls Grated Nutmeg
¼ tsp Fresh Ground Pepper
4 slices Grilled Sourdough Bread
Toasted Challah Bread


Optional: Soak beef in water for 24 hours in refrigerator.  This will soak out a lot of salt.  This recipe does not call for additional salt, so it wouldn't hurt to NOT soak it.

Melt butter in a sauce pan, add flour and whisk in flour to form a roux.

Add rest of ingredients (except beef) to sauce pan, stir rapidly and bring to a medium boil making sure the flour has dissolved and sauce has thickened.  Reduce heat to a very low simmer.  Now add the dried beef (throwing away the water used for soaking).  Continue to simmer everything for 15 minutes, stirring often.  Thin with beef stock if necessary.

Serve immediately over toast triangles.
