Pork Chop Brine
Up to 10 Pork chops

Qty Size Ingredient
2 gal Water
6 oz Cumin Seed
1 oz China Tung Hing Cinnamon Powder
2 oz Cinnamon Sticks
4 oz Allspice
2 oz Cloves
1 oz Mexican Oregano
2 oz Star Anise
2 oz Red Chili Powder
4 oz Red Chili Flakes
2 cups Salt (Kosher preferred)
4 oz Pink Salt (or Sea Salt)
2 cups Sugar
2 Bay Leaves
1 Orange, Quartered

Bring all ingredients to a boil and cool.  Add brine to a 5 gallon plastic bucket (or facsimile).  Add pork to brine and soak for at least 3 hours (over night best, with ice).

Grill as usual.
