Dillion's Mash Potatoes
Serves 4

Qty Size Ingredient
4 lg Russet Potatoes
¼ lbs Butter
½ cup Buttermilk
½ tsp Baking Powder
1 tsp Salt
½ tsp Pepper
3 cloves Garlic


Scrub potatoes; rub with shortening for softer skins (optional).  Prick with fork to allow steam to escape.  Bake in a 400 degree oven until tender, 50-75 minutes (depending on size).  Cool potatoes 10 minutes.  Cut a thin slice off top of each potato (about ¼) and carefully scoop out pulp leaving shell intact.

Mash potatoes half way, add rest of ingredients, whip until creamy smooth.  Refill shells to overflowing.  Brush with melted butter and refrigerate, covered.

To serve from refrigerator:  Bake uncovered in a preheated 400 degree oven until golden and heated through, 20-25 minutes.  Top with cheese and bacon bits.

To serve from the oven:  Broil uncovered in oven until golden, top with cheese and bacon bits.
