Beer Battered Fried Cod

Qty Size Ingredient
2 8 oz Filets Alaskan Pollock
1 cup Bread Flour
1 cup Yellow Corn Meal
1 16oz Oatmeal Stout Beer
Your Favorite Beer
2 tbls Raw Sugar
2 tbls Local Natural Honey
1 tsp Cayenne Pepper
1 tsp Baking Powder
1 tsp Fresh Ground Black Pepper
1 tsp Kosher Salt
 


Set deep frier or dutch oven to 350º.  A high temperature oil is best, such as Canola, Safflower or Grapeseed.

In a mixing bowl add all dry ingredients and combine.  Add first the beer and then honey and whisk briskly to mix thoroughly.
(do not mix beer & honey until you are ready to fry)

Pat the filets dry!  Dredge filet in mixture, let excess drip off, then gently drop - one filet at a time - into the fry oil.

Deep fry for about 2-3 minutes until golden brown and crispy.  Let drain for a few minutes on paper towels or wire rack.
