1 | cup | Yellow Corn Meal | ||
1 | 16oz | Oatmeal Stout Beer | ||
Your Favorite Beer | ||||
2 | tbls | Raw Sugar | ||
2 | tbls | Local Natural Honey | ||
1 | tsp | Cayenne Pepper | ||
1 | tsp | Baking Powder | ||
1 | tsp | Fresh Ground Black Pepper | ||
1 | tsp | Kosher Salt | ||
Set deep frier or dutch oven to 350º. A high temperature oil is best, such as Canola, Safflower or Grapeseed. In a mixing bowl add all dry ingredients and combine. Add first the beer and then honey and whisk briskly to mix thoroughly. (do not mix beer & honey until you are ready to fry) Pat the filets dry! Dredge filet in mixture, let excess drip off, then gently drop - one filet at a time - into the fry oil. Deep fry for about 2-3 minutes until golden brown and crispy. Let drain for a few minutes on paper towels or wire rack. Enjoy. (see also Pete's Fish & Chips Sauce) |
